My niece seems like a great home school candidate and I, along with my wife, are really the responsible parties. She is in 7th grade and pretty bored with school (for the same reasons I was). I can develop some of the Nicaragua-specific parts but am wondering what is a good starting point. Something Latin America or better yet Central America specific would help a lot.
