Two of my favorites are:
The Well Trained Mind by Susan Wise Bauer and Jessie Wise
This is a guide to Classical Homeschooling, which is a very rigorous and structured approach. Classical homeschooling is traditional and language intensive. The authors provide every last detail a parent needs to begin homeschooling, from reading lists to textbooks to daily schedules. Of course, it's all up to you how to use the information, but they have all the information there for you. I have found it to be a great starting place.
Creative Homeschooling: A Guide for Smart Families by Lisa Rivero
This is a great guidebook that outlines approaches to homeschooling, including classical, eclectic, unschooling, and unit studies. The author provides lots of examples as well as interviews with real homeschooling families, so you can hear what has worked for others and learn about various resources by subject and grade-level. She also offers information about testing and documentation.
